Colombia | Sudan Rume | Natural

Sudan Rume is an exotic varietal that is extremely difficult to cultivate. Once the seek stock was sourced, it was planted at Las Margaritas where the growers were happy to discover that it was ideally suited to the climate and conditions of the area. 

As the name suggests, Sudan Rume originates from the Boma Plateau in Southern Sudan, near the Ethiopian border. It is an heirloom Arabica plant, often used as a component in hybrids because of its prized flavours and moderate resistance to disease. Its one downfall is its low yield, making it rare as a standalone coffee.

Picking which occurs at the peaks of harvest ensure the cherries in this natural processed lot are at their prime before processing. These whole cherries are fermented dry in tanks with extreme care within a closed facility, to control ambient temperatures. This enhances and lifts the flavour of this truly unique cup profile.

Colombia | Java Pijao | Natural

This coffee is produced by Jairo Lopez, a new age coffee farmer whose focus is on developing new and interesting varieties and trailing different processing methods. This 100% Java lot that is an interesting alternative to Geisha with high cup quality. Grown at high altitudes in the Pijao region near Armenia. Java has an interesting and long history of cultivation. Java originated in Ethiopia and then was later introduced to the Indonesian island of Java. It is now cultivated by Jairo Ivan Lopez of Finca El Roble in Colombia. It is an uncommon variety in Colombia and the natural processing method allows for complexity in the end cup with a stunning fruit profile.

Cupping Notes: Fantastic syrupy body with orange blossom aroma, flavours of cacao, yellow peach and vanilla, finishing with hints of tropical fruits and chamomile flowers. A complex and elegant coffee.


Colombia | Castillo & Caturra | Tangerine Culture

The La Riviera farm is located in the La Estrella village of the municipality of Santa Rosa de Cabal in the department of Risaralda. Its owner is Julio Cesar Madrid Tisnes, a third-generation coffee grower. One day motivated by the desire to promote the consumption of quality coffee in his own country, he decided to buy a farm where his family could grow varieties of coffee that, despite the lower productivity, the taste in cup was remarkable. Currently they have special varieties including Geisha, Red, Pink and Yellow Bourbon, Tekisic, Sudan Rumé, Moka, Laurina, Maragogype, Yirgacheffe, Catiope, Java and SL28. They were concerned with controlling the quality of the coffee fermentation processes and thanks to this they have determined the ideal fermentation times for each of the varieties, as well as the drying protocols using mechanical and solar systems. After years of experience in coffee fermentation at Finca La Riviera they have designed four protocols adapted to the varieties:
