Colombia | Purple Caturra | Natural Cherry 

This unique lot comes from the trees of the Purple Caturra variety, and processed by the natural method, meaning the beans were dried inside the fruit rather than after the fruit has been removed, as is the case with the wet-processed or “washed” coffees.

The Purple Caturra Natural is harvested and produced at Finca Monteblanco – a farm located on the very top of a mountain, in the San Adolfo municipality above Pitalito, is a family farm managed by Rodrigo Sanchez Valencia and his wife Claudia Samboni.

In the 14 hectares of Monteblanco farm, Rodrigo and his team have achieved several exotic varieties’ ideal growth and productivity. This is thanks to the farm’s environmental characteristics allowing Rodrigo to cultivate top-quality Gesha, Pink Bourbon, Pacamara, Purple Caturra, and Red Caturra, among others.

Colombia | Sudan Rume | Natural

Sudan Rume is an exotic varietal that is extremely difficult to cultivate. Once the seek stock was sourced, it was planted at Las Margaritas where the growers were happy to discover that it was ideally suited to the climate and conditions of the area. 

As the name suggests, Sudan Rume originates from the Boma Plateau in Southern Sudan, near the Ethiopian border. It is an heirloom Arabica plant, often used as a component in hybrids because of its prized flavours and moderate resistance to disease. Its one downfall is its low yield, making it rare as a standalone coffee.

Picking which occurs at the peaks of harvest ensure the cherries in this natural processed lot are at their prime before processing. These whole cherries are fermented dry in tanks with extreme care within a closed facility, to control ambient temperatures. This enhances and lifts the flavour of this truly unique cup profile.

Colombia | Pink Bourbon | Natural

Pink Bourbon is believed to be a hybrid between Red and Yellow Bourbon and was discovered in San Adolfo, Huila. It generally has a higher glucose content than other varieties, which results in a sweeter brew and the silky mouthfeel it is prized for.

This coffee has been processed using carbonic maceration, where whole cherries are fermented in sealed containers with no oxygen. This process selects for certain microbes to carry out the fermentation creating a loud and complex flavour profile.
